Under the Orthodox Union and Rabbinate of Central and North Florida, Zayde’s state-of-the art kosher culinary center includes separate kitchens for glatt kosher meat, dairy, and pareve, all supervised by a full time on-site mashgiach.

Meet Harris Rosen
Harris Rosen is the President and COO of Rosen Hotels & Resorts and brainchild of Zayde’s Kosher Catering. Rosen is the epitome of an American success story. Raised in a modest Jewish home on the Lower East Side of Manhattan, he learned the importance of tradition and heritage. It is these memories that are etched into every aspect of Rosen Hotels & Resorts which made Zayde’s a natural addition. Named after Mr. Rosen’s grandfather (his Zayde), Samuel Rosenhaus, who immigrated to the US from Austria-Hungry in 1911, Zayde’s is about connecting to “our Bubbes and Zaydes who served as links to our rich past and what better way to celebrate their lives than through good kosher food,” says Mr. Rosen. “I couldn’t be more proud of Zayde’s Kosher Catering and what a wonderful way for our community to celebrate its heritage.”

Meet the Chefs
Executive Chef Jorge Oliveira
Wearing two chef hats, Executive Chef Jorge Oliveira oversees Zayde’s Kosher Catering at the Rosen Plaza Hotel while simultaneously managing the restaurant, catering and dining options at Rosen Shingle Creek.
Chef Jorge joined the Rosen family in 1991 and soon assisted in opening the Tamar Inns located at the Rosen Plaza Hotel, proving to Mr. Rosen that although it was early in his career, the 28-year-old was a talented chef. In 1995, Chef Jorge had the opportunity to serve on the pre-opening team at the Omni Rosen Hotel, now known as the Rosen Centre. The Chef is now helping Mr. Rosen to fulfill his grand vision for his latest venture, Zayde’s Kosher Catering.
Chef Jorge received his culinary degree from Johnson and Wales. While attending school, Jorge had the opportunity to apprentice at many fine-dining restaurants, focusing on French and Northern Italian cuisine. He began his career with Hilton Hotels in Dallas training under a master chef in one of its large convention centers and ultimately completed the Hilton Hotels management program. Over the next five years, Jorge continued to work for Hilton at the Flamingo Hilton in Las Vegas, Trump Marina in Atlantic City and the Palmer House in Chicago.
Executive Chef Michael McMullen
Executive Chef Michael McMullen is the Rosen Plaza Hotel’s culinary chef, as well as the supervisor on-site for Zayde’s catering operation. Chef Michael joined the Rosen team in 2006 after a distinguished career managing kitchens around the country, including the Westin and Hyatt Hotels and the Five Diamond Hyatt Regency Grand Cypress.
Chef Michael has been with Zayde’s from the inception of Mr. Rosen’s vision; his culinary knowledge was invaluable in the building of Zayde’s three kitchens in 2015. Chef Michael and his culinary team were trained in the specifics and details of kosher practices to ensure the highest kosher standards in the Zayde’s kitchen.
“The Zayde’s team is dedicated to providing the highest quality foods while adhering to the strictest standards of kashrut,” says McMullen. “Cooking is about respect. Whether it is a hot dog or quinoa, whether one is cooking for an adult or a child, food needs to be cooked, seasoned, prepared and presented properly.”
